Let’s get cooking

  1. 01

    Loosen the rice

Break up cold rice clumps with a spoon. Beat the eggs. Keep everything next to the stove.

  2. 02

    Scramble the eggs

Heat half the oil over medium heat. Add eggs, scramble until cooked, and transfer to a clean plate.

  3. 03

    Stir-fry the rice

Add the remaining oil and rice. Increase to medium-high heat and stir for 4–6 minutes. Add peas and cook until hot throughout.

  4. 04

    Season and serve

Return eggs, then add soy sauce, scallions, and optional pepper. Toss well. Reheated rice should reach 74°C / 165°F throughout. Serve immediately.

A little kitchen wisdom

Chilled rice is useful for texture, but only use rice that was cooled promptly and refrigerated. Never leave cooked rice out overnight.

Can’t find an ingredient?

Peas: Use finely diced carrot instead; cook it until tender before adding rice.

Cook safely

Refrigerate cooked rice within 2 hours; within 1 hour above 32°C / 90°F. Reheat to 74°C / 165°F.
