番茄炒蛋 · Fān qié chǎo dàn
Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Thin beef slices and broccoli in a light soy-garlic sauce. Slice across the grain and cook in a roomy pan.

Slice beef across the grain. Toss with half the soy sauce, half the starch, and a little measured water.
Boil broccoli 2–3 minutes until just tender. Drain well.
Heat most of the oil over medium-high heat. Fry beef in batches for 2–4 minutes, checking at least 63°C. Rest on a clean plate at least 3 minutes.
Combine remaining soy sauce, starch, and water. Add remaining oil and garlic to the pan, then broccoli.
Pour in sauce and simmer until slightly thickened. Return rested beef and toss until everything is hot.
Thin slices should have similar thickness so one batch cooks evenly.
Broccoli: Use thinly sliced bok choy stems; add leaves near the end.
Whole cuts of beef must reach 63°C / 145°F and rest at least 3 minutes.
