Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Chinese garlic chives fold into soft eggs for a fragrant quick meal. Dry the washed chives so the egg mixture is not watery.

Remove damaged leaves and tough bases. Wash, dry thoroughly and chop into 2 cm lengths.
Beat eggs with salt and measured water; mix in chives just before cooking.
Heat oil over medium heat. Pour in the mixture and let the base set for about 30 seconds.
Gently fold and turn the mixture for 3–5 minutes until chives soften and eggs are fully set at 71°C. Serve immediately.
Keep the heat moderate so the egg surface does not scorch before the middle cooks.
Garlic chives: Use 80 g finely sliced scallions for a different, milder aroma.
Cook egg dishes to 71°C / 160°F. For boiled eggs, the white and yolk should be firm.
