Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Chicken wings simmered in cola and soy sauce, then reduced to a light glaze. Regular cola supplies the sweetness in this version.

Pat wings dry with disposable kitchen paper. Do not wash raw chicken.
Heat oil over medium heat. Turn wings for 5–6 minutes until lightly golden.
Pour in cola and soy sauce, then add ginger and scallions. Bring to a gentle boil.
Simmer covered for 18–22 minutes, turning halfway. Add a splash of water if liquid reduces too quickly.
Check the thickest part reaches 74°C without touching bone. Uncover and reduce carefully until lightly coated, not dry.
Sugary liquid burns easily near the end. Lower heat as it thickens and keep turning the wings.
Cola: This formulation uses regular cola; diet drinks will not give the same glaze.
Chicken must reach 74°C / 165°F in the thickest part. Keep raw poultry and cooked food separate.
