Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Tender broccoli with a clean garlic flavour. A brief blanch helps thick stems and florets finish at the same time.
Wash broccoli and cut into similar-size florets. Peel and slice thick stems.
Boil a saucepan of water. Cook broccoli for 2–3 minutes until just tender; drain well.
Heat oil over medium heat. Add garlic and stir about 20 seconds until fragrant, without browning.
Add broccoli, salt, and measured water. Toss for 1–2 minutes until stems are tender and the pan is nearly dry.
Do not discard tender stems: peel the tough skin and slice thinly.
Broccoli: Cauliflower works too; blanch until just tender before frying.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
