Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Thin potato strips with vinegar and a little chilli. Rinse away loose starch, then cook through without turning them into mash.
Slice potatoes into about 2 mm matchsticks. Discard green, sprouted, or damaged potatoes.
Rinse the strips in cold water until loose starch is washed away, then drain well.
Heat oil over medium-high heat. Add garlic and optional chilli, then potatoes. Stir 3 minutes.
Add water and salt; toss for 2–4 minutes until cooked with no raw centre. Stir in vinegar, toss briefly, and serve.
A sharp knife or guarded mandoline helps make even strips. Vinegar adds flavour; it does not replace thorough cooking.
Fresh chilli: Use a pinch of dried chilli flakes, or omit for a mild dish.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
