Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Chicken pieces simmered first, with potatoes added later so they keep their shape. Serve with the savoury broth.

Pat chicken dry without rinsing raw poultry. Peel and cube potatoes, discarding green or sprouted ones.
Heat oil over medium heat in a heavy pot. Brown the drained meat for 4–6 minutes, turning, then add ginger and stir for 30 seconds.
Add soy sauces, measured water, and no additional vegetables yet. Bring to a boil, then cover and keep at a gentle simmer for 20 minutes. Add a little hot water if the pan begins drying out.
Add potatoes and simmer covered 15–20 minutes until tender. Check chicken reaches 74°C away from bone. Uncover briefly to reduce sauce if needed.
Use a gentle simmer and check the liquid level occasionally; thick pots still need monitoring.
Dark soy sauce: Omit it for a lighter colour; do not replace it with an equal extra amount of light soy sauce.
Chicken must reach 74°C / 165°F in the thickest part. Keep raw poultry and cooked food separate.
