Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Lightly blanched carrot strips with vinegar and sesame oil. Keep the strips thin so they soften evenly.

Wash carrots and cut into 2 mm matchsticks using a knife or a grater with a hand guard.
Boil carrot strips for 1–2 minutes until slightly softened but still holding their shape.
Drain, spread in a clean shallow bowl and let steam escape briefly. Refrigerate if not serving promptly.
Mix garlic, vinegar, sesame oil, salt and sugar. Toss with carrots and serve.
A little blanching makes the salad easier to chew without turning carrots soft enough to mash.
Sesame oil: Use neutral oil for a version without toasted sesame aroma.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
