Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Peeled shrimp steamed on a nest of glass noodles with garlic. The softened noodles absorb the savoury steaming juices.

Soak glass noodles according to their package, usually 10–15 minutes in warm water. Drain and cut into manageable lengths.
Warm oil over medium-low heat. Stir garlic 30 seconds without browning; remove from heat and mix with soy sauce and sauce water.
Spread noodles on a shallow heatproof plate. Place shrimp in one layer over them and pour the garlic sauce evenly across the plate.
Steam over boiling water 8–12 minutes, adjusting for shrimp size, until all shrimp are firm, opaque and pearly. Add scallion and serve carefully.
Choose a plate with a lip so the sauce does not run into the steamer.
Glass noodles: Use rice vermicelli, softened as the package directs; the texture will differ.
Cook shrimp until the flesh is firm, opaque, and pearly. Avoid cross-contact with raw seafood.
