Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Cool cucumber with garlic, vinegar, and a little sesame fragrance. Salt briefly, drain, then dress just before serving.

Rinse the cucumber. Lay it flat on a board and gently crush with a rolling pin; cut into bite-size pieces.
Toss with salt and leave for about 10 minutes in a bowl.
Pour off released water. Mix garlic, soy sauce, vinegar, sesame oil, and sugar in a separate bowl.
Toss cucumber with the dressing just before eating. Keep refrigerated if not serving immediately.
Use a rolling pin rather than a sharp knife to smash the cucumber. Dress late to keep it from becoming watery.
Sesame oil: Omit it if unavailable; the salad will have less toasted aroma.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
