Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Pressed tofu strips and celery in a simple savoury stir-fry. This uses firm ready-to-eat pressed tofu, not soft silken tofu.

Rinse celery and remove tough strings. Slice diagonally 3 mm thick. Cut pressed tofu into 5 mm strips.
Heat oil over medium heat. Add tofu and turn 2–3 minutes without breaking the strips.
Add garlic and celery, increase to medium-high heat and toss 2 minutes.
Add soy sauce and water; toss another 3–4 minutes until celery is cooked and tender. Reduce extra liquid before serving.
Taste seasoned pressed tofu before adding sauce; some brands are already quite salty.
Pressed tofu: Use well-drained extra-firm tofu, cut thicker and pan-fried gently first.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
