Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Chicken with ginger, garlic, soy, sesame oil, and basil. “Three-cup” names the seasoning style; this small-batch guide does not use three literal cups.

Pat chicken dry. Slice ginger and peel garlic; rinse and dry basil.
Heat both oils over medium-low heat. Cook ginger and garlic about 2 minutes without burning.
Increase to medium heat and turn chicken for 5 minutes until the surfaces change colour.
Add soy sauce, wine or its water replacement, measured water, and sugar. Cover and simmer 15–20 minutes until chicken reaches 74°C.
Uncover and reduce until lightly coated. Stir in basil for 30 seconds and remove from heat.
Basil goes in last so its fragrance stays fresh. This version uses less oil than some traditional recipes.
Shaoxing wine: Replace with the same volume of water for an alcohol-free ingredient choice; the flavour changes.
Chicken must reach 74°C / 165°F in the thickest part. Keep raw poultry and cooked food separate.
