Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
A light soup built from softened tomato and tofu. Frying the tomato briefly brings more flavour than simply boiling it.
Wash tomatoes and cut into small wedges. Drain tofu and cut into cubes.
Heat oil over medium heat. Cook tomatoes for 4–5 minutes, pressing a few pieces to release juice.
Add water or stock and bring to a boil. Simmer about 5 minutes.
Slide in tofu and simmer gently 3–5 minutes until hot throughout. Season with salt and scallion.
Taste the soup after the tomatoes have cooked; their acidity changes as they soften.
Soft tofu: Medium-firm tofu is easier to handle but gives a firmer bite.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
