Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Thin pork slices and fresh wood ear mushrooms in a light sauce. Use commercially sold fresh wood ears, cleaned according to their label.

Clean fresh wood ears as their package directs and trim hard bases. Slice pork across grain. Mix soy sauce, starch, and water.
Cook wood ears in boiling water for 3–5 minutes or the longer package time. Drain. Keep raw meat and cooked mushrooms separate.
Heat oil and stir pork 4–5 minutes. Check the thickest slices reach 63°C, then place on a clean plate and rest at least 3 minutes.
Stir garlic and bell pepper in the pan for 3 minutes. Add wood ears and re-stirred sauce; simmer 1–2 minutes. Return pork and toss until hot.
Fresh wood ears remove a separate soaking stage; never use mushrooms with an unusual sour smell or slimy texture.
Fresh wood ears: Use sliced fresh button mushrooms, cooking them until tender; the texture will be softer.
Whole cuts of pork must reach 63°C / 145°F, then rest at least 3 minutes. Ground pork must reach 71°C / 160°F.
