Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Soft eggplant in a glossy soy-garlic sauce. This pan-braised version uses a little water rather than deep-frying.

Combine soy sauces, sugar, and braising water. Mix starch with its measured cold water separately.
Heat oil over medium heat. Add eggplant and turn for 5 minutes until lightly coloured. Work in batches if necessary.
Add garlic and sauce. Cover and simmer 10–12 minutes, turning occasionally, until the centres are soft.
Uncover. Stir the slurry and add gradually to the simmering sauce. Cook 1–2 minutes until it lightly coats the eggplant.
A lid and a little water help the middle soften. Add a splash more water if the pan dries before the eggplant is tender.
Long eggplant: A globe eggplant works; cut it into even pieces and allow a little more time.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
