Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Wheat noodles stir-fried with chicken, cabbage, and carrot. Cook noodles just short of tender before finishing in the pan.

Cook noodles in boiling water following the package, stopping 1 minute before fully tender. Drain well. Mix soy sauce, sesame oil, and pan water.
Heat oil and stir-fry chicken for 5–7 minutes until the centre reaches 74°C. Lift out onto a clean plate.
Add garlic, carrot, and cabbage to the pan. Toss for 3–4 minutes until the cabbage wilts.
Add noodles, cooked chicken, and sauce. Use tongs to lift and turn for 2–3 minutes until everything is hot. If dry, add a splash of water. Scatter scallion.
Long noodles are easier to turn with tongs than to chop apart with a spatula.
Wheat noodles: Use rice noodles cooked according to their own package instructions.
Chicken must reach 74°C / 165°F in the thickest part. Keep raw poultry and cooked food separate.
