Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
A clear simmered soup with ribs, sweet corn, and ginger. A gentle simmer keeps the broth from becoming cloudy.
Place ribs in a pot with enough cold water to cover. Bring to a boil for 3 minutes, drain, and wash the pot.
Put ribs, ginger, and measured fresh soup water in the clean pot. Bring to a boil and skim foam.
Lower to a gentle simmer and cover loosely. Cook about 40 minutes.
Add corn and carrot and simmer another 25–30 minutes until meat is tender. Add hot water if the level drops too far.
Season with salt at the end. Handle hot corn sections carefully and check the meat is fully cooked.
Do not boil hard for the whole cooking time; a steady gentle simmer is enough.
Corn: Use sweetcorn kernels; add them only for the final 10 minutes.
Whole cuts of pork must reach 63°C / 145°F, then rest at least 3 minutes. Ground pork must reach 71°C / 160°F.
