Let’s get cooking

  1. 01

    Prepare meat and sauce

Coat pork with half the starch and a little measured water. Mix remaining starch, water, soy sauce, vinegar, and sugar separately.

  2. 02

    Cook the pork

Heat most of the oil over medium-high heat. Cook pork in a thin layer until at least 63°C, about 3–5 minutes. Transfer to a clean plate.

  3. 03

    Soften vegetables

Add remaining oil, mushrooms, and carrot. Stir 4–5 minutes until tender.

  4. 04

    Cook aromatics

Lower heat and add garlic, ginger, and bean paste. Stir about 30 seconds.

  5. 05

    Coat with sauce

Return pork. Stir the sauce again, pour in, and toss until thickened. Rest pork at least 3 minutes after reaching its safe temperature.

A little kitchen wisdom

Carrot strips need to be thin enough to soften quickly. Keep a small splash of water nearby if the pan dries.

Bean paste: Use a little chilli sauce for a different, less fermented flavour.

Cook safely

Whole cuts of pork must reach 63°C / 145°F, then rest at least 3 minutes. Ground pork must reach 71°C / 160°F.
