Let’s get cooking

  1. 01

    Prepare the dressing

Finely mince half the ginger and scallions for dressing. Slice the remaining ginger and cut remaining scallions into sections.

  2. 02

    Start poaching water

Bring water, ginger slices, and scallion sections to a boil in a saucepan.

  3. 03

    Poach gently

Add chicken and lower to a steady gentle simmer. Cook about 15–20 minutes, checking the thickest part reaches 74°C; extend as needed.

  4. 04

    Rest safely

Move chicken to a clean board and rest 5 minutes before slicing. Do not use a raw-meat board.

  5. 05

    Warm the dressing

In a small pan heat oil over medium-low heat. Cook minced ginger and scallion for 30–60 seconds, season with salt and optional soy sauce, and spoon over chicken.

A little kitchen wisdom

Keep the liquid gently simmering rather than repeatedly switching the heat off.

Chicken thighs: Chicken breast can work but may dry more easily; still check 74°C.

Cook safely

Chicken must reach 74°C / 165°F in the thickest part. Keep raw poultry and cooked food separate.
