Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
A boneless white-fish fillet steamed with ginger, then dressed with soy and scallion. Fillet thickness matters more than the clock.
Put a rack in a covered saucepan with water below the rack. Choose a heatproof plate that fits with space around it.
Pat fish dry, check for remaining bones, and place on the plate with ginger underneath and on top.
Bring water to a boil. Put in the plate, cover, and steam over steady heat about 10–15 minutes for a 2 cm-thick fillet.
Use a thermometer at the thickest point: fish must reach 63°C. Extend steaming as needed. Use mitts to lift the plate.
Carefully pour away excess steaming liquid. Warm soy sauce, measured sauce water, oil, and scallion in a small pan and spoon over the fish.
Thin fillets cook faster. Keep water in the steamer and check that it does not boil dry.
White fish: Cod, haddock, or tilapia fillets work; adjust time to thickness.
Fish must reach 63°C / 145°F in the thickest part. Remove bones carefully before serving.
