Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Tofu, mushrooms, and ribbons of egg in a peppery, tangy broth. Vinegar and white pepper are adjusted at the end.

Slice tofu and mushrooms. Beat the egg and mix starch with its cold water.
Bring stock to a boil. Add mushrooms, then simmer 5 minutes. Add tofu and soy sauce and simmer 3 minutes.
Stir the slurry and drizzle into gently boiling soup, stirring until slightly thickened.
Pour egg in a thin stream while gently moving a spoon through the soup. Simmer until the egg is fully cooked.
Turn heat low, add vinegar and pepper, then taste. Scatter scallion and serve.
The heat comes mainly from white pepper. Start small; vinegar strength also varies by brand.
Egg: Omit for an egg-free soup; use extra tofu instead.
Cook egg dishes to 71°C / 160°F. For boiled eggs, the white and yolk should be firm.
