Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Thin lotus root rounds with garlic and a little vinegar. Cooking through keeps its distinctive firm texture without a raw centre.

Peel lotus root, trim ends and rinse dirt from the holes. Cut into 2–3 mm rounds and rinse off loose starch.
Boil slices 3–4 minutes in fresh water, then drain.
Heat oil over medium-high heat. Add garlic, then lotus root; stir-fry 2 minutes.
Add salt and measured water and cook 3–4 minutes until slices have no raw centre. Add vinegar and scallion; toss briefly.
Very thick rounds need more cooking time; slice evenly instead of relying on a fixed timer.
Fresh lotus root: Use refrigerated pre-sliced lotus root; check package cooking instructions and drain well.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
