Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Soft eggplant with a little ground pork and garlic. Covered cooking softens the eggplant with modest oil.

Wash and trim eggplant, then cut into even strips. Keep it away from raw pork utensils.
Heat 1 tablespoon oil and fry pork for 4–5 minutes, breaking it apart, until it reaches 71°C. Add garlic and stir briefly.
Add remaining oil, eggplant, soy sauce, and water. Cover and simmer 10–12 minutes, stirring twice, until eggplant is soft with no firm centre.
Uncover and reduce excess liquid for 2–3 minutes. Stir in vinegar and scallion. Serve hot.
Long thin eggplants cook faster than large thick ones; check tenderness before reducing the sauce.
Ground pork: Use finely chopped mushrooms and vegetarian stock for a meat-free version.
Whole cuts of pork must reach 63°C / 145°F, then rest at least 3 minutes. Ground pork must reach 71°C / 160°F.
