Let’s get cooking

  1. 01

    Blanch the pork

Cover pork with cold water in a saucepan. Bring to a boil for 3 minutes; drain well and clean the pan.

  2. 02

    Render gently

Return pork to the dry pan over medium-low heat. Turn for 5 minutes as some fat releases. Spoon off excess fat if needed.

  3. 03

    Add seasoning

Add ginger, scallions, soy sauces, sugar, and optional star anise. Pour hot water to almost cover the pork.

  4. 04

    Braise patiently

Bring to a boil, then cover and simmer gently 60–75 minutes, until a fork enters easily. Add hot water if it dries early.

  5. 05

    Reduce the sauce

Uncover and simmer 5–10 minutes, stirring gently, until sauce coats the meat. Remove whole spices before serving.

A little kitchen wisdom

Tenderness takes time. Do not reduce all the water before the meat has softened.

Can’t find an ingredient?

Dark soy sauce: Omit if unavailable; the dish will be paler.

Cook safely

Whole cuts of pork must reach 63°C / 145°F, then rest at least 3 minutes. Ground pork must reach 71°C / 160°F.
