Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Rolled wheat dough with scallion layers, cooked in a frying pan. A short dough rest makes rolling much easier.

Mix flour with water gradually. Knead 3–5 minutes until a soft dough forms; add tiny amounts of water or flour if necessary.
Cover and rest about 20 minutes. Mix scallion with salt just before rolling.
Divide dough into four pieces. Roll each thinly, brush with part of the oil, scatter scallion, roll into a rope, then coil into a spiral.
Rest coils 5 minutes, then roll to roughly 5 mm thick. Do not force them if dough springs back.
Use remaining oil over medium-low heat. Cook each pancake 3–5 minutes per side until golden and the centre is cooked with no raw dough.
Brown surfaces can hide raw dough in thick pancakes. Roll evenly and use moderate heat.
Scallions: Finely sliced chives give a different but pleasant onion flavour.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
