Let’s get cooking

  1. 01

    Prepare

Pat shrimp dry. Whisk eggs with salt, measured water, and scallion.

  2. 02

    Cook shrimp

Heat half the oil over medium heat. Cook shrimp 3–5 minutes, turning, until firm and opaque throughout. Transfer to a clean plate.

  3. 03

    Scramble gently

Add remaining oil, lower heat, and pour in eggs. Gently fold as the bottom sets.

  4. 04

    Combine and finish

Return cooked shrimp and fold until eggs are fully set and the egg mixture reaches 71°C. Serve straight away.

A little kitchen wisdom

Do not add raw shrimp to nearly finished eggs; they need their own cooking time.

Can’t find an ingredient?

Shrimp: Omit for scallion scrambled eggs.

Cook safely
