Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
A mild zucchini side with garlic and a small splash of soy sauce. The vegetable supplies most of the cooking moisture.

Wash zucchini, trim ends and halve lengthwise. Slice half-moons about 4 mm thick.
Heat oil over medium heat and stir garlic 20 seconds until fragrant.
Add zucchini and increase to medium-high heat. Toss 4–6 minutes until slices soften. Add the measured water only if the pan dries.
Add soy sauce and vinegar, toss another minute and serve while the slices still hold their shape.
Use a wide pan; a deep crowded pan steams the zucchini in its own liquid.
Zucchini: Use yellow summer squash with the same slicing and doneness checks.
Serve freshly cooked; refrigerate perishable leftovers promptly. Check packaged ingredients for allergens.
