Kung Pao Chicken
A home-kitchen take on the Sichuan classic: chicken, crunchy peanuts, and a tangy sauce. Make the heat your own.
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.

Whisk the eggs with half the salt. Cut the tomatoes before heating the pan so everything is ready.
Heat half the oil in a frying pan over medium heat. Add eggs and fold into soft curds. Transfer to a clean plate.
Add the remaining oil and tomatoes. Cook for 3–5 minutes, stirring, until they soften. Add water, remaining salt, and optional sugar.
Return eggs to the pan. Fold together for 1–2 minutes until the eggs are fully cooked and the dish is piping hot. Finish with scallion and serve.
Use ripe tomatoes for a fuller sauce. If the pan looks dry, add water a tablespoon at a time rather than extra oil.
Scallion: A little chopped chive works as a finishing garnish.
