Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
A warm noodle bowl with tomato broth and cooked eggs. Boil noodles separately so the broth does not become overly starchy.
Beat eggs and chop tomatoes. Put a separate saucepan of water on for noodles.
Heat half the oil over medium heat. Scramble eggs until fully set, then transfer to a clean plate.
Add remaining oil and tomatoes. Cook 4–5 minutes, then add measured stock or water. Simmer 5 minutes.
Boil noodles to package directions in the separate pan and drain.
Return eggs to the tomato broth and bring back to a simmer until hot throughout. Season and ladle over noodles, adding scallion.
Salted stock may need no extra salt. Taste the finished broth before seasoning.
Wheat noodles: Use rice noodles for a different texture and check their cooking instructions.
Cook egg dishes to 71°C / 160°F. For boiled eggs, the white and yolk should be firm.
