Tomato & Egg Stir-fry
Soft eggs, juicy tomatoes, and a little sauce to spoon over rice. A comforting place to begin your Chinese cooking journey.
Rice slowly cooked into a soft porridge, with mushrooms and greens added later. Keep a little hot water ready as the rice thickens.
Rinse rice in cold water, drain, and place in a large saucepan with measured water.
Bring to a boil, then lower to a gentle simmer with the lid ajar. Stir the bottom occasionally.
Simmer 30–35 minutes until rice breaks down and the liquid thickens. Add hot water if too thick.
Add mushrooms and ginger and cook about 10 minutes until cooked.
Add greens and simmer another 3–5 minutes until tender. Season with salt and optional sesame oil.
A pan that is too small may overflow. Stir gently to stop rice sticking on the bottom.
Bok choy: Use chopped spinach, adding it near the end.
Cool cooked rice promptly in shallow containers and refrigerate within 2 hours, or 1 hour above 32°C / 90°F. Reheat leftovers to 74°C / 165°F.
